Oatmeal Peanut Butter Cookie Sandwiches

I've been on a hunt for a non "traditional" cookie, something a little different than your typical chocolate chip, or oatmeal, or plain peanut butter, but also something that wouldn't take me hours to make. And I think I've found it. All the reviews for this recipe claim the cookies (with a peanut butter filling- we made ours a chocolate filling) taste exactly like the Girl Scout cookie. Having never had the GS oatmeal-peanut butter cookie, I can't really say if they're right. But either way, they're really good and very sweet!
You can also serve these cookies as singles, with the filling as a frosting on top or just plain. I like them both ways and I can eat more of them when they're singles...
Oatmeal Peanut Butter Cookie Sandwiches

3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
1 cup quick cooking oats
  1. Preheat oven to 350 degrees F. In a large bowl, cream together 1/2 cup butter or margarine, 1/2 cup peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well. Add vanilla and stir.
  2. In another bowl, combine the flour, baking soda, baking powder, and salt. Add the dry ingredients to the creamed mixture. Stir. Add oatmeal and stir.
  3. Drop by teaspoons onto greased baking sheet, and press each mound down with a fork to form 1/4 inch thick cookies. Bake for 10 minutes, or until cookies are a light brown.
Filling:

1 tablespoon butter
1/4 cup semi-sweet chocolate chips*
1 cup powdered sugar
1/2 cup smooth peanut butter
2-3 tablespoons milk
  1. Melt chocolate chips and butter together in a small saucepan on very low heat (or on a double broiler) or in the microwave (stirring frequently to prevent burning).
  2. In a small bowl, mix butter and chocolate chips with the powdered sugar, 1/2 cup smooth peanut butter, and the milk, 1 tablespoon at a time. The filling should be thick enough that when you bite into the sandwich, it doesn't ooze out.
  3. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.
*The original recipe used a plain peanut butter filling. If you prefer, simply omit the chocolate chips and butter.

Really good! I needed a big glass of milk but I promise I could take a bath in that chocolate.
